Cacao Nut No Bake Bites
FROZEN NO BAKE BITES to the rescue! These little gems save me on car rides, at endless sports tournaments, packed into lunches for a treat or a quick after-school snack. (Sometimes they help me out when I’m needing something sweet but don’t want to steal my kids’ candy—because that’s wrong, Right?).
Ingredients:
- 1 cup cacao nibs
- 1 cup raw almond butter (can split 1/2 nut butter, 1/2 nuts)
- 10 medjool dates, pitted
- 1 tsp ground cinnamon
- 1/4 tsp cayenne (optional)
- a pinch of sea salt
Place all the ingredients in a food processor. Pulse to combine well.
Then, gather:
- 1 -2 T coconut oil (warm it, so liquid)
- Shredded, unsweetened coconut
Drizzle coconut oil into the processor, a little at a time, and pulse until combined. If mixture is too sticky to form into balls, allow it to rest in the freezer 10-15 mins.
Roll into 1 inch balls. Put unsweetened, shredded coconut on plate and roll to coat. Refrigerate.
Can be frozen in airtight container.
