Potage Parmentier (Potato Leek Soup a la Julia Child)
The magic of transforming water by simmering russet potatoes and leek. You have my ❤️Julia Child. I discovered this incredible soup when I lived in France; it is still an absolute staple in my home.
Ingredients
2 quarts water
3-4 cups peeled, diced potato
3 cups thoroughly washed, chopped leek (to pale green)
1 tbsp salt
Directions
In a stock pot, bring all ingredients to a simmer.
Partially cover and allow to simmer 40-50 mins.
With an immersion blender, blend to smooth (I leave a few chunks of potato).
Ladle into bowls, a pat of grass fed butter and a little fresh pepper.
