Simple Roasted Tri-Color Carrots
Adding veggies to lunch is quick! I popped these in the oven while I got the rest of my meal together (hummus and quinoa tabbouleh).
These delicious babies are so simple, they don't even need a full recipe explanation. Just toss the carrots with some olive oil, salt and pepper and pop in an oven heated to 400 for about 20 minutes and they are done! I drizzled a little reduced balsamic vinegar on them to serve.
A well-nourished, optimally functioning metabolism needs 7-11 servings of veggies every day. I can't say it enough: Grandma was right!
