It's Not Easy Being Green
My current favorite green smoothie. Not creamy at all. Crisp, light and bright. This smoothie packs a veggie punch with just enough sweet to make you forget it’s a green smoothie.
Ingredients:
8 oz. coconut water
2 c baby spinach
1/4 c frozen or fresh pineapple
3-5 slices of cucumber (peel remains)
1 stalk of celery, cut into pieces
2 t honey (optional)
1 t freshly grated ginger
squeeze of fresh lemon or lime
Directions:
Place everything in a blender and puree until smooth.
If needed, add liquid to achieve desired consistency.
If using fresh pineapple and want a thicker consistency, add ice cubes.
Note: you can add a vanilla or unflavored protein powder. I like to keep it lighter and not creamy.
